Description:
Buying fresh meat for catering and trade according to the cost specification for each group. The goods offered must be corresponding to all the regulations of the Republic of Croatia and the EU by quality and health correctness and meet the required provisions - the conditions in the procurement documentation.
Delivered fresh Meat should not be subjected to any other canning process except cooling. The same must be delivered within 48 hours of slaughter since it is a high risk food.
The food temperature at each delivery of goods must match the allowed temperature for a particular species on the declaration products.
The carcasses and halves are delivered to be properly marked with a sticker or pendant, all in accordance with the valid rulebook on the quality of beef carcasses and half on the slaughter line and the valid rulebook on sorting and marking pork carcasses.
Tag marking or half of the sea Being done directly after slaughter and the conducted categorization and classification procedure or halves, before the beginning of their cooling, on the outer side of the trunk, ie half of the front and rear quarters. The mark must be resistant to damage, well-readable without the possibilities of changing data on it.
